AGRICULTURAL ACTIVITY
The property extends over 15 hectares.
A large part of the land is delimitated, on the higher grounds from
the road that leads to Pomarance and the raod that heads towards
Libbiano and Micciano.
The high grounds, the most extended is in a sunny and well ventilated
area, the ideal postion for a vineyard
and olive grove.
In the past, this terrain was cultivated with vineyards, and then
substituted with olive groves.

There is still about half a hectare of vineyard
left today that produces a large quantity of black
grapes (Sangiovese and Canaiolo) and a smaller quantity of
white grapes (Malvasia), enough for
a small wine production to be sold to our guests if they choose.
The harsh terrain here is clay-like and arid. It was, therefore,
imperative to drill for a well to be able provide the water necessary
for cultivation.
Integrated agricultural cultivation
it used here with use of suitable fertilizer, for the most part
cow manure.
A large vegetable garden provides produce
necessary for the restaurant and preparation of preserves, with
specail attention to artichokes.
The fruit orchard is mainly made up
of fig, apricot,
pear trees and mulberry
bushes.

On the two slopes of the terrain that head towards the Scorza Nera
ravine, cereals and grains are often
sowed, in particular a good amount of wheat necessary for restaurant
use. The most common thing sowed is forage for the livestock.

| FARMING ACTIVITY
CALENDAR |

In case our guests would like to partecipate or assist in
any of the farming activities, here is our calendar:
- January - March: pruning
- March - May: sowing, fertilizing,
artichoke harvest, forage cutting
- June - September: vegetable
and fruit harvest, tomato harvest and drying, preparation
of preserves.
- September - October: grape
harvest for wine, grape pressing, fruit harvest, preparation
of preserves.
- October - November: olive
harvest and pressing

EXPANSION PLAN (that will be carried out in
2008)
- Fruit orchard expansion with fruit
trees of rare almost extinct types
- Botanical garden addition with flora specimens from Alt Val
di Cecina
- Official herb garden expansion,
with lavander in particular for profumery, oil and soap production
- An additional 500-600 olive trees
- Complete transplant of current vineyard
according to modern criteria and new DOC
disciplinary of the area.
